Grow it yourself: Green chilies, Ginger
Restaurant cooks do these things by habit. Here’s what each step is actually doing to the food, so you can cook by understanding instead of guesswork.
Keep the ginger and chilies fully covered in lemon juice.
Lemon juice is very acidic, roughly pH 2 to 2.6, from its citric acid. Submerged in it, the ginger and chilies take on acid, which keeps most spoilage microbes from growing. Anything poking above the juice isn’t protected, so press everything under.
Toss the ginger with salt before adding the lemon juice.
Salt pulls water out of the ginger by osmosis, seasoning it through and making room for the lemon juice to soak in. Together, salt and acid make the pickle tangy and help preserve it.
Don’t worry if the ginger turns pale pink.
Some ginger, especially young ginger, contains natural anthocyanin pigments that turn pink in acid, the same reaction that colors Japanese pickled ginger. It’s harmless and a sign of fresh ginger.
Leave the jar somewhere warm for 1–2 days, then refrigerate.
Warmth speeds up how fast salt and acid move into the ginger, so the sharp raw bite mellows in a day or two instead of a week. After that, refrigeration slows everything down and keeps it crisp.
Use a clean, completely dry glass jar and a dry spoon.
Water and food bits introduced by a wet spoon dilute the acid and bring in microbes. Glass doesn’t react with acid, unlike some metals.
