The lab notes

The science behind every step

Restaurant cooks do these things by habit. Here’s what each step is actually doing to the food, so you can cook by understanding instead of guesswork.

Lab note01

Ginger tenderizes

Marinate 30 minutes to 2 hours, not overnight.

Fresh ginger contains zingibain, a protein-splitting enzyme that softens meat; too long and the surface turns mushy. Cooking deactivates it.

Lab note02

Zest in, juice last

Put zest in the marinade and juice in at the end.

Zest carries fragrant oils that survive cooking; juice’s fresh sour taste fades with heat, so it goes in last.

Lab note03

Black pepper and ginger

Use black pepper and ginger for heat instead of lots of chili.

Piperine in pepper and gingerols in ginger give a warm, clean heat that suits lemon better than red chili.

Lab note04

The Indian base order

Cumin, then onions, ginger-garlic, salt and powdered spices, tomatoes, and garam masala last.

Each step cooks in the order its flavor needs: whole cumin blooms in hot fat, onions brown and sweeten, ginger-garlic loses its raw edge, ground spices toast for seconds without burning, tomatoes cook down until the oil separates, and garam masala goes in last so its aroma survives.

How to make it, at a glance

  1. MarinateMix the chicken with the grated ginger, lemon zest, yogurt, salt and black pepper. Marinate 30 minutes to 2 hours in the fridge.
  2. Cumin and onionSelect Sauté. Heat the ghee, add the cumin until it sizzles, then the onion until golden, 6–7 minutes.
  3. Ginger-garlic, then spicesAdd the ginger-garlic paste and green chilies for 1 minute, then the salt, chili, turmeric and coriander for 30 seconds.
  4. TomatoAdd the tomato and cook until soft, 3 minutes.
  5. Pressure cookAdd the chicken with its marinade and the water, scraping the bottom. Pressure cook on High for 6 minutes; natural release 5 minutes.
  6. FinishSelect Sauté and reduce until the sauce coats the chicken, 3–4 minutes; check for 165°F. Turn off the heat and stir in the garam masala, lemon juice, ginger matchsticks and herbs.
