What is lasuni gobi?

Lasun means garlic. Lasuni gobi is an Indo-Chinese restaurant favorite: crispy fried cauliflower tossed in a garlicky soy-chili sauce, a cousin of gobi Manchurian. Indo-Chinese cooking grew from the Hakka Chinese community in Kolkata and spread across India.

The lab notes

The science behind every step

Restaurant cooks do these things by habit. Here’s what each step is actually doing to the food, so you can cook by understanding instead of guesswork.

Lab note01

Parboil, then dry completely

Blanch the florets 2 minutes, then pat dry and let steam off.

A short blanch seasons the florets and softens the stems so the inside is tender by the time the outside crisps. Any surface water turns to steam in the oil and lifts the coating off.

Lab note02

Cornstarch and rice flour

Use a starch-and-rice-flour coating instead of wheat flour.

Neither has gluten, so the coating fries into a thin, glassy crust instead of a bready one, and it stays crisp longer under sauce.

Lab note03

Garlic low, then high

Start the garlic in warm oil, not smoking oil.

Garlic burns in seconds at high heat and turns bitter; gentle heat turns it golden and sweet.

Lab note04

Toss at the last minute

Reduce the sauce to a glaze and toss right before serving.

A thick glaze coats the florets instead of soaking in; the longer they sit in sauce, the softer the crust gets.

How to make it, at a glance

  1. Blanch and dryBoil the florets in salted water for 2 minutes, drain, spread on a towel and pat completely dry. Let steam off 5 minutes.
  2. CoatWhisk the cornstarch, rice flour, salt, chili, pepper and ginger-garlic paste with just enough cold water to make a thick batter that clings. Toss the florets until evenly coated.
  3. Fry or air fryFry in oil at 350°F in batches until golden and crisp, 4–5 minutes, and drain on a rack. Or spray with oil and air fry at 400°F for 15–18 minutes, shaking halfway.
  4. Crispy garlicWarm the sliced garlic in 1 tbsp oil over medium-low heat until pale golden, 2–3 minutes. Lift out; it keeps crisping as it cools.
  5. Garlic sauceHeat 2 tbsp oil over medium heat. Add the chopped garlic, ginger, chilies and spring onion whites and stir until fragrant and just golden, 1–2 minutes. Add the soy, ketchup, chili sauce, vinegar and sugar, then the cornstarch slurry, and simmer until thick and glossy, 1 minute.
  6. Toss and serveTurn off the heat, add the cauliflower and toss quickly to coat. Top with the crispy garlic and spring onion greens and serve right away.

Questions, answered

How do I keep lasuni gobi crispy?

Dry the blanched florets completely, use cornstarch and rice flour, and toss in the sauce just before serving.

Can I make lasuni gobi in an air fryer?

Yes: spray with oil and air fry at 400°F for 15–18 minutes.

Why is my lasuni gobi soggy?

The florets were wet before coating, or it sat in the sauce too long. Dry well and toss just before serving.

Can I make it gluten-free?

The coating already is; use tamari instead of soy sauce and a gluten-free chili sauce.
