What is biryani?

Biryani is spiced meat layered with long-grain basmati rice, fried onions, herbs and saffron, then steamed (dum) so the rice absorbs the aromas. It grew up in Mughal-era royal kitchens and has dozens of regional styles, from Hyderabadi to Karachi and Lucknowi; its exact origin is debated.

This Instant Pot version layers the rice over the marinated meat so it steams just like dum, in a fraction of the time.

The lab notes

The science behind every step

Restaurant cooks do these things by habit. Here’s what each step is actually doing to the food, so you can cook by understanding instead of guesswork.

Lab note01

Rinse and soak the rice

Rinse basmati until the water runs clear, then soak 30 minutes.

Rinsing removes loose surface starch that makes rice gummy. Soaking lets water into the grain before cooking, so it cooks evenly and basmati elongates instead of breaking.

Lab note02

Measured water

Use 1 cup water per cup of soaked rice under pressure.

Soaked rice has already absorbed water, and almost no water escapes from a sealed pot, so the usual stovetop ratio would make it mushy.

Lab note03

Bloom the saffron

Steep saffron in warm milk for 10 minutes.

Saffron’s color comes from crocin, which dissolves in water; warm liquid extracts the color and aroma so it spreads through the rice.

Lab note04

Don’t stir the layers

Layer the rice over the meat and don’t stir before cooking.

Rice on top steams in the aromatic vapor while the meat and its juices sit on the bottom, which also helps prevent the Burn warning.

How to make it, at a glance

  1. MarinateMix the meat with all the marinade ingredients. Marinate at least 1 hour, or overnight in the fridge.
  2. Soak the riceRinse the rice until the water runs clear, then soak in fresh water for 30 minutes. Drain well. Steep the saffron in the warm milk.
  3. Bloom the whole spicesSelect Sauté (More/High) and heat the ghee. Add the bay leaf, cardamom, cloves, cinnamon and cumin and fry for 30 seconds.
  4. Pressure cook the lambAdd the lamb with its marinade and ½ cup water, scrape the bottom, lock the lid and pressure cook on High for 25 minutes. Natural release 10 minutes, then open. Select Sauté and simmer until the liquid reduces to about 1 cup.
  5. Layer the riceSpread the drained rice evenly over the meat without stirring. Pour 2 cups water gently over the rice, sprinkle with ½ tsp salt and press the rice under the water.
  6. Pressure cookLock the lid, set the valve to Sealing and pressure cook on High for 6 minutes. Natural release for 10 minutes, then quick release.
  7. FinishDrizzle the saffron milk and melted ghee over the rice, scatter fried onions and herbs, close the lid and rest 5 minutes. Fluff gently from the sides, folding the meat and rice together, and serve with raita.

Questions, answered

Why is my biryani mushy?

Too much water, unsoaked or over-soaked rice, or stirring the layers. Use 1 cup water per cup of soaked rice.

Can I use regular rice?

Long-grain basmati gives the classic separate grains; other rice turns stickier.

Can I use goat (mutton)?

Yes; goat may need 30 minutes in the first pressure cook.
