What is dahi puri?

Dahi puri is a chaat (Indian street snack) made with the same crisp, hollow puris used for pani puri. Instead of spiced water, they’re filled with potato and chickpeas and topped with chilled sweet yogurt, chutneys and crunchy sev.

In Kolkata and across Bengal, pani puri is called phuchka (ফুচকা), and the yogurt version is doi phuchka (দই ফুচকা). Ready-made puris (sold as pani puri or golgappa puris) make this quick at home.

The lab notes

The science behind every step

Restaurant cooks do these things by habit. Here’s what each step is actually doing to the food, so you can cook by understanding instead of guesswork.

Lab note01

Why puris go soggy

Fill and top the puris right before eating.

Puris are crisp because almost all their water was fried out. The moment they touch wet yogurt or chutney, water starts moving into the dry shell and softens it within minutes. Assembling at the table keeps the crunch.

Lab note02

Chill the yogurt

Whisk the yogurt with sugar and keep it cold.

Cold dairy tastes less sour and feels thicker. Whisking smooths out lumps, and the sugar balances the yogurt’s lactic acid and the tamarind’s sourness. Keep it refrigerated until serving.

Lab note03

Sweet, sour, hot and salty

Use both the tamarind and green chutneys.

Chaat is built on contrast: tamarind’s tartaric acid and sugar, the green chutney’s fresh heat, the yogurt’s cool creaminess and chaat masala’s black salt. Each one makes the others taste brighter.

Lab note04

Instant Pot potatoes

Pressure cook whole potatoes on a trivet.

At high pressure the Instant Pot steams at about 239–244°F (115–118°C), well above boiling, so potatoes cook through in about 10 minutes. Cooking them whole on the trivet, out of the water, keeps them from getting waterlogged, so they mash fluffy rather than gluey.

How to make it, at a glance

  1. Pressure cook the potatoesPour 1 cup water into the Instant Pot and set the trivet inside. Place the whole potatoes on the trivet, lock the lid, set the valve to Sealing and pressure cook on High for 10 minutes (12–15 for large potatoes). Quick release. A knife should slide in easily.
  2. Make the fillingPeel and mash the potatoes roughly. Mix in the chickpeas, salt, cumin and chili powder.
  3. Sweeten the yogurtWhisk the yogurt with the sugar and a pinch of salt until smooth. Refrigerate.
  4. Tamarind chutneySimmer all the tamarind chutney ingredients in a small pan (or the Instant Pot on Sauté) for 5–6 minutes, until syrupy. Cool.
  5. Green chutneyBlend the cilantro, mint, green chilies, lemon juice, salt and cold water until smooth.
  6. Assemble and serveJust before eating, gently crack a hole in the top of each puri. Fill with a spoonful of potato mixture, then spoon over the cold yogurt, a little of each chutney, sev, pomegranate, a pinch each of chaat masala, cumin and chili, and some cilantro. Serve right away.

Keep in mind

  • The puris and sev are fried, and the sweet yogurt and tamarind chutney add about 15 g of added sugar per serving (estimated). Use less sugar in the yogurt to cut it.
  • Chaat masala adds sodium from black salt.
  • Keep the yogurt cold. Contains dairy and wheat.

  1. Cook onceOn prep day, make the recipe at 7× (use the button above to scale every amount). Big pots take longer to come to a boil and to reduce, so allow extra time; an Instant Pot should be filled no more than halfway for beans and lentils, or two-thirds for other dishes, so cook in rounds if needed.
  2. Cool it fastDivide the food into shallow containers so it cools quickly, and refrigerate within 2 hours of cooking.
  3. Split fridge and freezerKeep days 1–4 in the fridge. Freeze the rest in single-meal portions labeled with the date.
  4. Thaw the night beforeMove the next day’s portion from the freezer to the fridge the night before. Reheat until steaming hot all the way through (165°F / 74°C).

Freezer
Not suitable for freezing.
Keep separate or add fresh
Keep the filling, sweet yogurt and chutneys in separate containers and assemble only when serving.
Reheat
Serve cold; no reheating needed.

Why only a few days in the fridge? Refrigeration slows bacteria but doesn’t stop them; some, like Listeria, can still grow at fridge temperatures, which is why food-safety agencies set cooked leftovers at 3–4 days. Freezing at 0°F stops growth completely, so frozen portions stay safe indefinitely; the freezer times above are for best taste and texture.
