The lab notes

The science behind every step

Restaurant cooks do these things by habit. Here’s what each step is actually doing to the food, so you can cook by understanding instead of guesswork.

Lab note01

Where the smoke flavor comes from

Char the skin until black and blistered all over.

Burning skin releases smoky aroma compounds (phenols such as guaiacol) that steam into the soft flesh inside. Coals give the most, a gas flame next, and the air fryer the least.

Lab note02

Pierce before charring

Poke a few slits in the eggplant first.

Steam builds inside as it cooks; slits let it escape so the eggplant doesn’t burst.

Lab note03

Pick a light eggplant

Choose one that feels light for its size, with glossy skin.

Lighter eggplants tend to have fewer seeds and less bitterness.

Lab note04

Rest covered to peel

Cover the hot eggplant for 10 minutes.

Trapped steam loosens the charred skin so it slips off.

Lab note05

The Indian base order

Cumin, then onions, ginger-garlic, salt and powdered spices, tomatoes, and garam masala last.

Each step cooks in the order its flavor needs: whole cumin blooms in hot fat, onions brown and sweeten, ginger-garlic loses its raw edge, ground spices toast for seconds without burning, tomatoes cook down until the oil separates, and garam masala goes in last so its aroma survives.

How to make it, at a glance

  1. Prep the eggplantWash and dry the eggplant, rub it with oil and make 4–5 small slits; tuck in garlic slivers if using.
  2. Char it: choose one methodGas stove: set it directly on the flame (line the burner with foil), turning every 2–3 minutes with tongs, until black all over and collapsing, 12–15 minutes. Coals: nestle it into glowing coals or on a grill grate over them, turning, 15–20 minutes; the smokiest. Air fryer: 400°F for 25–30 minutes, turning twice, until wrinkled and very soft.
  3. Rest and peelCover with a bowl for 10 minutes, then peel off the charred skin (a few dark flecks are good) and remove the stem. Mash the flesh with a fork.
  4. Cumin and onionsSelect Sauté (More). Heat the ghee, add the cumin seeds until they sizzle, then the onions until deep golden, 8–10 minutes.
  5. Ginger-garlic, then spicesAdd the ginger-garlic paste and green chilies for 1 minute, then the salt, chili, turmeric and coriander for 30 seconds.
  6. TomatoesAdd the tomatoes (and peas) and cook until soft and the oil separates, 6–7 minutes.
  7. Mash it inAdd the mashed eggplant and cook, mashing and stirring, until thick and well blended, 6–8 minutes. Stir in the garam masala and cilantro.
