What are aloo bread rolls?

Aloo bread rolls are a popular Indian snack: slices of soft bread are briefly dipped in water, squeezed, wrapped around a spiced potato filling, sealed into rolls and fried until golden and crisp.

They use the same spiced aloo filling as our bread pakora, and they’re just as good from the air fryer.

The lab notes

The science behind every step

Restaurant cooks do these things by habit. Here’s what each step is actually doing to the food, so you can cook by understanding instead of guesswork.

Lab note01

Why the bread is dipped

Dip each slice in water for a second, then press out the excess between your palms.

Dry bread cracks when rolled. A quick dip lets the bread’s starch absorb water and become soft and pliable, so it wraps around the filling and sticks to itself when pressed. Squeezing out the extra water matters: leftover water spatters in hot oil and makes the rolls soak up grease.

Lab note02

A firm, cool filling

Use completely cooled filling shaped into small logs.

Cool potato is firm and easy to wrap, and it won’t steam the bread soggy from inside before it fries.

Lab note03

Sealing

Press the edges and ends firmly so no filling shows.

Any gap lets oil in and filling out. Damp bread presses into a tight seal because its moistened starch acts like glue.

Lab note04

Frying temperature

Fry at 350–360°F (175–180°C).

Hot oil turns surface moisture to steam, which keeps oil out while the bread’s starch and proteins brown into a crisp crust. Too cool and the rolls turn greasy; too hot and they brown before they crisp through.

Lab note05

Air fryer option

Brush with oil and air fry at 375°F (190°C).

An air fryer circulates very hot air, which dries and browns the surface like shallow frying. A thin coat of oil helps the bread brown and crisp evenly.

How to make it, at a glance

  1. Pressure cook the potatoesPour 1 cup water into the Instant Pot and set the trivet inside. Add the whole potatoes, lock the lid, set the valve to Sealing and pressure cook on High for 10 minutes (12–15 for large ones). Quick release, peel and mash.
  2. Make the fillingSelect Sauté and heat the oil in the emptied, dried inner pot (or a pan). Add the cumin seeds for 20 seconds, then the ginger and green chilies for 30 seconds. Add the mashed potatoes, salt, chili powder, turmeric, garam masala and amchur and mix for 2 minutes. Stir in the cilantro and let cool completely.
  3. Shape the fillingDivide the cooled filling into 8 portions and shape each into a small log.
  4. WrapDip a bread slice in water for 1 second and press it firmly between your palms to squeeze out the water. Place a potato log at one end, roll the bread around it and press the seam and both ends to seal into a closed roll. Repeat.
  5. Heat the oilHeat 2 inches of oil in a heavy pot or kadai to 350–360°F (175–180°C).
  6. FryFry 3 or 4 rolls at a time, turning, for 3–4 minutes until deep golden and crisp all over.
  7. Drain and serveDrain on a wire rack and serve hot with green chutney and ketchup.

Potatoes supply potassium and vitamin C, plus filling starch.

Well established

Air fryer option

Air frying with a brush of oil uses a small fraction of the oil that deep frying does.

Keep in mind

  • Deep-fried rolls absorb oil; keep the oil at 350–360°F and drain on a rack.
  • White bread is a refined grain. Contains wheat (gluten).

Questions, answered

Why did my rolls open in the oil?

The seams weren’t pressed firmly, or the bread was too dry or too wet. Squeeze out the water and press the seams well.

Can I use brown bread?

Yes, though whole wheat bread is a little more likely to crack; dip it a touch longer.

Can I freeze them?

Freeze shaped, uncooked rolls on a tray, then bag them. Fry or air fry from frozen, adding a few minutes.

Why only a few days in the fridge? Refrigeration slows bacteria but doesn’t stop them; some, like Listeria, can still grow at fridge temperatures, which is why food-safety agencies set cooked leftovers at 3–4 days. Freezing at 0°F stops growth completely, so frozen portions stay safe indefinitely; the freezer times above are for best taste and texture.
