Soft-cooked raw mango, sweet and sour, spiced with roasted cumin and black salt, poured over ice with mint.

Aam panna is a North Indian summer drink of cooked raw green mango, sugar and spices. It’s traditionally made during the hottest months, when raw mangoes are in season.

The main ingredients, with their English, Hindi and Urdu names.

Firm, sour green mangoes.
Pinkish-gray rock salt that smells of egg.

Cumin seeds dry-toasted, then ground.
Fresh leaves.
Grow it yourself: Mint (pudina)
Restaurant cooks do these things by habit. Here’s what each step is actually doing to the food, so you can cook by understanding instead of guesswork.
Pressure cook the whole mangoes, then squeeze out the pulp.
Heat breaks down pectin in the mango’s cell walls, so the flesh slips off the seed and blends smooth.
Balance the sourness with sugar or jaggery.
Raw mangoes are rich in citric and malic acids; as mangoes ripen those acids fall and sugars rise, which is why green mangoes are so tart.
